The American Wagyu Association uses an ‘F’ scale in referencing genetics of American Wagyu Cattle. Our entire heard has be DNA tested and each of our cows, steers, heifers, and bulls have received an F rating, which is as follows:
• 100% = Full Blood
• 93.76-99.9% = F4
• 87.5 – 93.75% = F3
• 75 – 87 .4 = F2
• 50 – 74.9 = F1

Storage Instructions
Keep frozen until ready to prepare. Best to thaw in refrigerator overnight. Take out of refrigerator one hour prior to cooking to allow meat to get to room temperature. Wagyu Osso Buco shank cuts are great for braising, stewing, and making ultra nutrient rich bone broth.
